Mushroom & Prawns

500g of oyster mushrooms

200g of ready-shelled prawns

25g of shallots, thinly-sliced

1 spring onion (scallion), chopped

2 sprigs of coriander leaves (cilantro), chopped

2 tbsp fish sauce

3 tbsp green limejuice

1 red chili, chopped


  1. Poach prawns in a saucepan of boiling water over high heat for one minute, stirring to make sure each prawn curls up. When they are done, they curl up and are firm and springy to the touch. Pick them out of the pot, shake off excess water and place on a serving plate.
  2. Wipe mushrooms clean and cut in half. Put them in a colander over the sink. Pour the still-boiling prawn water over the mushrooms. Shake off excess water and place the mushrooms with the prawns.
  3. Rinse the coriander leaves and roots. Chop off the roots and pound them to a pulp. Squeeze the juice into the limejuice, fish sauce, chili and shallot, stir to mix. Toss dressing with prawns and mushrooms. Sprinkle with spring onions, coriander leaves. Serve.
