no knead bread recipe

this is cool as heck, and I am just recording it here so that I can try it later. Got the tip to go find this recipe after reading a Sunday Times article about Mark Bittman.

No knead bread


2 cups of flour

1/4 teaspoon of yeast

1.5 cup of water

1 1/4 teaspoon of salt

Wheat bran

1) Mix water, yeast, salt and flour together.

2) Leave for 12 hours. Dough should be stringy in texture.

3) Lightly pat the dough. Fold it over at the four sides. Cover with some wheat bran at both sides.

4) Leave it seam down in iron pot. Cover it.

5) Preheat oven at 500.

6) Bake dough for 30 minutes with cover of pot on. Bake another 15-20 minutes with the cover open.
