Linguine with Garlic and Oil

A Roman standard, apparently.

My sister didn’t like the strong garlic taste. It is quite a spartan recipe. But I love garlic. I used fettuccine instead of linguine. Parmesan helped give the dish more flavour.

Linguine with Garlic and Oil


2 tablespoons of finely-chopped garlic

1/2 cup extra virgin olive oil


1 pound pasta

Parsley leaves, minced


1) Cook pasta in large pot of water

2) Meanwhile, combine garlic, oil and salt in small skillet over medium-low heat. Allow garlic to turn golden, but not dark brown.

3) Dress pasta with sauce and garnish with parsley.

** Use pasta water to thin the sauce if required.

** Add parmesan to taste, if you like
